
Vegetable Soup
Ingredients
- 2 T oil
- 2 T butter
- 1 C chopped leeks
- 1/2 C chopped onions
- 2 cloves garlic minced
- 1 C sliced carrots
- 1 C chopped potatoes
- 1 C peas
- 1 C cut green beans
- 1 C diced turnips
- 1 C sliced celery
- 1/4 C chopped parsley
- 2 8- oz cans tomato sauce
- 2 tsp salt
- 1/2 tsp pepper
Instructions

Sauté leeks, onion and garlic in oil and butter. Add remaining ingredients and 6 C water. Simmer, covered, 2 hours. 8 servings.
