Ingredients

  • 2 T oil
  • 2 T butter
  • 1 C chopped leeks
  • 1/2 C chopped onions
  • 2 cloves garlic minced
  • 1 C sliced carrots
  • 1 C chopped potatoes
  • 1 C peas
  • 1 C cut green beans
  • 1 C diced turnips
  • 1 C sliced celery
  • 1/4 C chopped parsley
  • 2 8- oz cans tomato sauce
  • 2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Sauté leeks, onion and garlic in oil and butter. Add remaining ingredients and 6 C water. Simmer, covered, 2 hours. 8 servings.
