Tortilla Chicken Casserole

Course Casserole, Chicken, Main Dish


  • corn tortillas
  • chicken breast in pieces (cooked, skinned and boned)
  • Ortega chili peppers seeded and cut into strips
  • Grated jack and cheddar cheese
  • 1 can cream of mushroom
  • can of chicken broth


  1. Spray casserole with Pam.

  2. Line with corn tortillas which have been cut into strips.

  3. Over this place pieces of chicken breast (cooked, skinned and boned).

  4. Then layer Ortega chili peppers, seeded and cut into strips.

  5. Grated jack and cheddar cheese next.

  6. Alternate these ingredients and layers to all but cheese.

  7. Cover with 1 can cream of mushroom and can of broth saved from stewed chicken.

  8. Cover with foil.

  9. Place in oven; let bake approximately 30 min. or till bubbly.

  10. Add remaining cheese mixture - remove foil - continue baking for 30 min. longer.

  11. This casserole should be prepared at least 12 hours prior to serving - refrigerate.

  12. Bake 1 hour before serving time.
