
Sweet and Pungent Pork
Ingredients
- 2 lbs pork shoulder cubed
- 2 eggs beaten
- 1 C flour
- Oil for cooking
- 3 gr peppers cut into strips
- 2 cans pineapple chunks and juice
- 1/2 C brown sugar
- 1/2 C vinegar
- 3 T molasses
- 3 tomatoes peeled and diced
- 2 T cornstarch
- 1 tsp salt pepper
- 1/2 C sliced onion

Combine gr pepper, pineapple, brown sugar, vinegar, molasses, pepper, juice of pineapple and 1/2 C water. Bring to boil stirring constantly. Add tomatoes, simmer 5 min. Combine cornstarch with 1/4 C water and add to mixture. Cook until thickened. Beat eggs, flour and 1/2 C water. Add pork cubes and stir until coated. Fry pork in 2" of hot oil, (375°) until golden brown. Add to sauce and simmer for 20 min. Serves six.
