
Sky High Strawberry Pie
Ingredients
- 1 C sugar
- 3 T cornstarch
- 1/8 tsp salt
- 3 T white corn syrup
- 1 C water
- 3 T strawberry jello
- 1 qt to 2fresh whole strawberries
- 9- in baked pastry shell
- Sweetened whipped cream
Instructions

Combine sugar, cornstarch, salt, syrup and water and cook over low heat until thick and clear. Add jello and mix until dissolved. Cool to room temperature. Arrange a layer of strawberries tightly in pastry shell. Spoon just enough cooled syrup over berries to lightly cover or glaze. Repeat layers until all berries are used. Be sure all berries are lightly glazed. Chill until set, about 6 hours. Serve with whipped cream. (One qt. berries fills pastry shell to rim; 2 qts. raises berries about 2" above rim)
