Skillet Chicken 'n Rice

Course Casserole, Chicken, Main Dish


  • 1/2 C flour
  • 2 tsp salt
  • 1 tsp Paprika
  • 1/8 tsp pepper
  • 1 frying chicken cut up
  • 2-4 T margarine
  • 3/4 C rice not 5-minute rice!
  • 13 3/4 oz can chicken broth
  • 1 med Onion sliced


  1. Combine flour, 1 1/2 tsp salt, paprika, & pepper and coat chicken pieces well. Slowly brown chicken in margarine over low heat. Sprinkle uncooked rice evenly in skillet between chicken pieces. Combine broth and remaining 1/2 tsp salt and pour over chicken and rice. Cover with onion slices. Cover skillet and simmer gently over low heat about 40 min til chicken is tender and rice has absorbed broth.
  2. You can add any veggie that sounds good to this dish.
