Ingredients

  • Game Plan:
  • Slice potatoes; shred carrots. Cook.
  • Slice and sauté shallots.
  • Rinse spinach; drain.
  • Crush fennel.
  • Mash potatoes and carrots.
  • Sauté shrimp and spinach.
  • Ingredients:
  • 1/2 tsp fennel seed
  • 1 T olive oil
  • 2 cloves garlic minced
  • 1 1/2 lb. large shrimp shelled and de-veined
  • 1/2 tsp salt + 1/4pepper
  • 2 T chopped parsley
  • 1/4 C dry white wine

Instructions

  1. Directions:
  2. Crush fennel seed. In large skillet, heat oil. Add fennel seed and garlic. Cook for 30 seconds. Stir in shrimp, salt and pepper. Sauté 3 minutes or until shrimp are opaque; stir in parsley. With slotted spoon, place shrimp on plate.
  3. In same pan, boil wine 1 minute. Pour over shrimp.
  4. Makes 4 servings. per serving: 222 calories, 35 g protein, 2 g carbohydrate, 6 g fat, 259 mg cholesterol, 520 mg sodium.
  5. Approx. 20 min. dinner.
