
Shrimp Scampi
Ingredients
- Game Plan:
- Slice potatoes; shred carrots. Cook.
- Slice and sauté shallots.
- Rinse spinach; drain.
- Crush fennel.
- Mash potatoes and carrots.
- Sauté shrimp and spinach.
- Ingredients:
- 1/2 tsp fennel seed
- 1 T olive oil
- 2 cloves garlic minced
- 1 1/2 lb. large shrimp shelled and de-veined
- 1/2 tsp salt + 1/4pepper
- 2 T chopped parsley
- 1/4 C dry white wine

Directions:

Crush fennel seed. In large skillet, heat oil. Add fennel seed and garlic. Cook for 30 seconds. Stir in shrimp, salt and pepper. Sauté 3 minutes or until shrimp are opaque; stir in parsley. With slotted spoon, place shrimp on plate.

In same pan, boil wine 1 minute. Pour over shrimp.
