
Shanks of Lamb, Near East Style
Ingredients
- 6 lamb shanks
- 1 C chopped onion
- 2 T butter
- 1 T salt
- 1 tsp black pepper
- 1/8 tsp oregano
- 2 T Paprika
- 3 cloves garlic minced
- 1 8- oz can tomato sauce
- 1/2 C beef broth
- 1/2 C dry sherry or Riuniti Lambrusco
Instructions

Soak the lamb in cold water for 1/2 hour. Drain, dry, and remove excess fat. Arrange in a shallow casserole or deep skillet with ovenproof handle.

Sauté the chopped onion in the butter and add to the lamb with the salt, pepper, oregano, paprika, garlic, tomato sauce, broth and sherry.

Cover and bake in a 350° oven 1 1/2 hours, basting occasionally. Remove cover and continue baking in a 250° oven until lamb browns and is tender - about 45 min. Baste frequently. Serve with cracked wheat or rice. Serves 6-8.
