
Salsa Potato Bowl
Ingredients
- Potato Bowl Ingredients:
- 2 Potatoes washed & baked
- 4 Tbsp. Salsa see below
- 8 – 16 Oz. Grated/shredded cheese
- Corn & Bell Pepper Salsa Ingredients:
- Qty Item
- ¾ C Corn kernels cut from cob (around 2 cobs…esp. if you double the recipe like I do)
- ¼ C Red Bell Peppers diced
- ¼ C Green Bell Peppers diced
- 2 Roma tomatoes diced
- 1 in jalapeno pepper seeded & minced to desired spiciness (I split onehalf and use ½ the seeds)
- 1 Clove Garlic minced
- ½ bunch Fresh Cilantro minced
- tsp ½Ground Cumin I use a bit more!
- 1 tsp salt
- tsp ½Pepper
- ¼ C olive oil
- ½ Fresh Squeezed lime juice
Instructions

Toss all the above salsa ingredients together in a bowl. Allow to marinate for at least 30 minutes prior to serving. After the potatoes are cooked, cut legthwise, spoon in/on salsa, top with cheese. Tip: If you have more than 2 people/2 potatoes, you will want to at least double the salsa recipe. This is good! It’s also good on fish, etc.
