
Roast Pork
Ingredients
- 2 lbs lean part of Boston butt
- MARINADE
- 4 slices ginger root
- 2 in Scallions cut2" lengths
- 2 T dark soy sauce
- 4 T hoisin sauce
- 2 T Amer. chili sauce
- 1/4 tsp pepper
- 1 T plum sauce
- 1 T bean sauce
- 2 cloves garlic crushed
- 4 T sherry
- 2 T honey

Prep:

Cut pork into strips, 5x3x11/2". Score each strip at intervals of about 1 1/2". Mix together ingredients of marinade. Marinate 2-8 hours, turning over once at midpoint. Refrigerate if marinating longer than 2 hrs. Save 2-3 T to add to sauce later on. Dribble honey over pork.

Cooking procedure:

350° oven: pierce each strip with metal hook and hang each hook over a rung of the oven rack. Put pan of 1" water in oven to catch drippings. Roast 40 min. and 15 min. at 450°. Cool 5 min.
