
Peach Parfait Pie
Ingredients
- 1 #2 can sliced peaches
- 1 pkg orange gelatin
- 1/2 C cold water
- 1 pt vanilla ice cream
- 1 baked 9-inch pastry shell
- Whipped cream for garnish
Instructions

Drain peaches, reserving syrup. Add water to syrup to make 1 C; heat to boiling. Add gelatin and stir until dissolved. Add 1/2 C cold water. Cut ice cream in 6 portions; add to gelatin mixture and stir until melted. Chill until partially set - about 15 min. Fold in peaches; pour into pastry shell. Chill until firm. Garnish with whipped cream, if desired.
