Ingredients

  • Pastry:
  • 6 oz cream cheese
  • 1 C butter
  • 2 C flour
  • Misc:
  • 1 C chopped pecans

  • 2 eggs
  • 1 1/2 C brown sugar
  • 2 T melted butter
  • 1/2 tsp vanilla
  • 1/4 tsp salt

Instructions

  1. Pastry-
  2. Blend cream cheese and butter. Gradually mix in flour to make a smooth dough. Shape dough into 1 1/4" balls. Put into 1 3/4" muffin cups or 2 1/4" sandbakels tins. Press firmly to completely cover bottom and sides making a shell.
  3. Filling-
  4. Beat eggs, sugar, butter, vanilla and salt till smooth. Sprinkle half of pecans over unbaked dough in cups. Spoon filling mixture into each cup filling about 3/4 full. Sprinkle each with the rest of the pecans. Bake at 350° for 15 min. Turn oven to 250° and bake 10 more min.
  5. Makes about 3 dozen, depending on size or pans used.
