Mexican Veggie Soup

  • 1 lb gr. beef
  • 1 pkg taco seasoning mix
  • 1 can tomato juice 46 oz
  • 1 can chili hot beans undrained, 15 3/4 oz
  • 1 oz pkg frozen mixed veggies 16or 3 C
  • 1 can tomato paste 12 oz
  • 3 oz shredded cheddar cheese 2 C


  1. In a 5-qt Dutch oven, brown gr. beef; drain. Add taco seasoning mix, tomato juice, chili beans, frozen veggies and tomato paste; mix well. Bring to a boil. Reduce heat; simmer uncovered 20-25 min or till veggies are tender, stirring occasionally. Top each serving with corn chips and cheddar cheese. Makes 6-8 lg servings or 10-12 small ones.
