Mexican Meat Sauce (large portion)

Course Beef, Main Dish, Sauce

Ingredients

  • in Brown large pot:
  • 5 lb ground chuck
  • 1/2 lg onion
  • Blend till liquefied and greenish; add to meat:
  • 1/8 oz fresh garlic
  • 1/2 T heapingcumin
  • 5 black peppercorns
  • 1 1/2 C water
  • Add to sauce:
  • 2 T chili powder
  • 1/2 T salt
  • 3 C tomato sauce
  • in Blend 1 1/2 C flour and 2 C water; add to sauce. Simmer till heated thru. Add salt and pepper to taste. Add more water if too thick. Cool meat sauceice water and putcontainers.

  7. 1/3 tsp cumin
  8. 1 black peppercorn
  9. 1/3 C water
  10. Add to sauce:
  11. 1/2 T chili powder
  12. 2/5 tsp salt
  13. 3/5 C tomato sauce
  14. Blend 1/2 C flour and 1/3 C water; add to sauce. Simmer till heated thru. Add salt and pepper to taste. Add more water, if too thick. Cool meat sauce in ice water and put in containers.
