Mac 'N Cheese Puff

  • 1/2 C macaroni
  • 2 beaten egg yolks
  • 1 1/3 C milk
  • 1 T milk
  • 2 tsp instant minced onion
  • 8 oz frankfurters bias-sliced
  • 1 C shredded sharp Amer. cheese
  • 2 C soft bread crumbs 3 slices
  • 2 stiff-beaten egg whites


  1. Cook macaroni in boiling salted water about 10 min. or till tender; drain. In saucepan, combine egg yolks, milk, butter, mustard, onion, 1/4 tsp salt, and dash pepper; add cheese. Cook and stir over medium heat about 10 min. or till mixture thickens slightly (do not boil). Stir in macaroni and breadcrumbs. Fold in egg whites. Pour half the mixture into a 1-1/2 qt. souffle dish. Reserve remaining franks in casserole. Pour on remaining macaroni mixture. Arrange reserved franks on top. Bake in 350° oven for 45 min. Garnish at once. Makes 6 servings.
