Lucy's Sand Cookies

  • 1 C shortening
  • 1 C sugar
  • 2 well-beaten eggs
  • 2 1/2 C flour
  • 1/2 tsp salt
  • 1 tsp vanilla
  • finely chopped pecans


  1. In a bowl: Cream together 1 C shortening or butter and 1 C sugar. Work with hands until fluffy. Stir in 2 well-beaten eggs. Next: Sift together 2 1/2 C flour with 1/2 tsp salt. Stir this into sugar and shortening. Mix. Add 1 tsp vanilla and finely chopped pecans. Grease lightly a cookie sheet. With a tsp of dough, make a ball and set balls widely apart from others. Cover a fruit glass with a wet tea towel. Press down on each ball. Thin round cookie. Sprinkle lightly with sugar and bake about 8 min at 400°. Cool thoroughly before storing.
