
Lucy's Sand Cookies
Ingredients
- 1 C shortening
- 1 C sugar
- 2 well-beaten eggs
- 2 1/2 C flour
- 1/2 tsp salt
- 1 tsp vanilla
- finely chopped pecans

In a bowl: Cream together 1 C shortening or butter and 1 C sugar. Work with hands until fluffy. Stir in 2 well-beaten eggs. Next: Sift together 2 1/2 C flour with 1/2 tsp salt. Stir this into sugar and shortening. Mix. Add 1 tsp vanilla and finely chopped pecans. Grease lightly a cookie sheet. With a tsp of dough, make a ball and set balls widely apart from others. Cover a fruit glass with a wet tea towel. Press down on each ball. Thin round cookie. Sprinkle lightly with sugar and bake about 8 min at 400°. Cool thoroughly before storing.
