Lemon Meringue Pie

Ingredients

9" Pie

  • 1 1/2 C sugar
  • 1/3 C cornstarch
  • 1 1/2 C water
  • 3 egg yolks
  • 3 T butter
  • 1/4 C lemon juice
  • 1 T grated lemon rind

8" Pie

  • 1 C plus 2 T
  • 1/4 C
  • 1 C plus 2 T
  • 2 egg yolks
  • 2 T T butter
  • 3 T C lemon juice
  • 1 T grated lemon rind

Instructions

  1. For the filling:
  2. Mix in saucepan sugar & cornstarch.
  3. Stir water in gradually.
  4. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 min. Slowly stir at least half the hot mixture into egg yolks.
  5. Then blend into hot mixture in saucepan. Boil 1 min. longer, stirring constantly. Remove from heat. Continue stirring until smooth.
  6. Blend in butter, lemon juice & grated lemon rind.
  7. Pour into baked pie shell. Cover with pie meringue. Bake until a delicate brown. Serve as soon as cool.
  8. Temp: 400° Time: 8-10 min.
