
Lemon Meringue Pie
Ingredients
9" Pie
- 1 1/2 C sugar
- 1/3 C cornstarch
- 1 1/2 C water
- 3 egg yolks
- 3 T butter
- 1/4 C lemon juice
- 1 T grated lemon rind
8" Pie
- 1 C plus 2 T
- 1/4 C
- 1 C plus 2 T
- 2 egg yolks
- 2 T T butter
- 3 T C lemon juice
- 1 T grated lemon rind
Instructions

For the filling:

Mix in saucepan sugar & cornstarch.

Stir water in gradually.

Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil 1 min. Slowly stir at least half the hot mixture into egg yolks.

Then blend into hot mixture in saucepan. Boil 1 min. longer, stirring constantly. Remove from heat. Continue stirring until smooth.

Blend in butter, lemon juice & grated lemon rind.

Pour into baked pie shell. Cover with pie meringue. Bake until a delicate brown. Serve as soon as cool.
