Lasagna

Ingredients

  • 1 lb bulk Italian sausage or ground beef
  • 1/4 C chopped onions
  • 1 large can tomatoes
  • 2 cans tomato sauce 8 oz
  • 1 can mushrooms drained, 4 oz
  • 1 clove garlic crushed
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1/2 tsp oregano
  • 1/4 tsp pepper
  • 1/2 lb lasagna noodles
  • 2 C ricotta cheese
  • 1 C raw spinach chopped
  • 1/4 C diced salami
  • 2 eggs
  • salt and pepper to taste
  • 1 C shredded Mozzarella cheese
  • 1/4 C Parmesan cheese

Instructions

  1. Brown sausage with onion. Add tomatoes, sauce, mushrooms, garlic, basil, parsley, salt, oregano, pepper and water. Set aside. Cook noodles. Combine ricotta, spinach, salami, egg, salt and pepper to taste. Set aside.
  2. In 12x8" baking dish alternate layers of noodles, meat mixture, cheese mixture and Mozzarella, ending with cheese. Sprinkle Parmesan over top.
  3. Bake in 350° oven 30 min. Remove from oven and stand 15 min. before serving.
