Honey Whole Wheat Bread
- 5 C warm water 105-115°
- 2 pkg yeast 2 T
- 1/2 C dry milk powder
- 1/4 C honey
- 4 C whole wheat flour
- 1/2 C instant potato flakes or 1 C mashed potatoes
- 6 T shortening
- 1 T salt
- 6 1/2 - 8 C white flour divided
In large mixing bowl, dissolve yeast in warm water. Add milk powder and dissolve. Add honey, whole wheat flour, instant potato flakes, salt, shortening and enough white flour to make a thick batter. Beat for two minutes with mixer on medium high speed. With wooden spoon, mix in enough white flour, a little at a time, to make a soft dough. Turn out onto lightly floured surface and knead for 8-10 minutes. Place in lightly greased bowl, turning once.
Cover and let rise in warm place until doubled in bulk. Punch down. Divide into thirds. Cover and let rest five minutes. Shape into three loaves and place in three greased 8x4" pans. Cover and let rest until doubled in bulk, about 1 hour. Bake in 375° oven 45-50 min. or until tests done. Remove from pans and cool on racks. Makes 3 loaves.
