Hard Candy (Lollipops, even)

  • in Bring to a boillarge heavy pan:
  • 1 C water
  • Remove from heat. Add and stir till dissolved:
  • 2 C sugar
  • 3/4 C light corn syrup
  • 1 T butter


  1. Return to heat. When boiling, cover for 3 min. to wash down sugar crystals. Uncover and cook at high heat without stirring until thermometer reaches 310°. Meanwhile, butter your marble slabs (cookie sheets, even). Remove candy mixture to low heat and add a few drops food color and an oil-based flavoring (3/4 - 1 tsp) - available from your friendly pharmacist: eg. peppermint, cinnamon, clove, anise, orange, lime, wintergreen, etc.
