
Green Beans with Bacon Dressing
Ingredients
- 1/2 lb bacon
- 2 eggs
- 1/3 C vinegar
- 1/2 C water
- 3 T sugar
- 1/4 tsp salt
- 2 lb can whole green beans 1ea
- 1 tsp diced pimiento opt
Instructions

Cook bacon until crisp; drain, reserving 1/4 cup drippings; crumble bacon. Beat eggs, vinegar, water, sugar and salt together until blended; return drippings to skillet; add egg mixture; cook over low heat, stirring constantly, until thickened. Heat beans in saucepan; drain and arrange in serving dish; pour hot dressing over beans; sprinkle with crumbled bacon and diced pimiento. Serves 6 - 8.
