Golden Puff Pancake

(also called a Dutch Baby)


  • 3 large Eggs
  • ½ cup Flour
  • ½ cup Milk
  • 2 Tbsp Sugar
  • ½ tsp Vanilla Extract
  • 1.2 tsp Salt
  • 2 Tbsp Butter
  • Powdered Sugar
  • Jam and/or fresh fruit for toppings


  1. In a blender combine eggs, flour, milk, sugar, vanilla and salt, blend until smooth. Let batter rest while oven preheats to 425 degrees F. Place butter in a heavy ovenproof skillet, place in hot oven for 1-2 minutes to melt (do not burn). Carefully swirl pan to coat with butter; pour in batter. Bake for 18-20 minutes, until pancake is puffy and deeply golden. Cool 5 minutes, dust with powered sugar, cut into wedges serve with jam or fruit. Refrigerate leftovers.
