Flour Tortillas


  • Mix together with your hands till like coarse oatmeal:
  • 6 C flour
  • 1 T salt
  • 1 T baking powder


  1. Mix in 2/3 C shortening, then 1 1/2 C very hot water. 

  2. Knead and add extra flour till dough doesn't stick to your hands. 

  3. Form a ball (smooth). Pinch off balls about 1 1/2" in diameter. Roll in flour. 

  4. Form a flat saucer with thin center. Do several at a time to sit for a while. 

  5. Dust rolling surface. Roll out each ball, turning over, keeping it as round as possible. 

  6. Fry on greaseless griddle till bubbles appear and slightly browned on bottom (at 350-375°). 

  7. Turn and flatten (slap it hard!) to break bubbles and fry till lightly browned. 

  8. Cover cooked tortillas in towel and then put in plastic bag (or covered Tupperware). Store extra tortillas in frig.
