English Muffin Bread
- 2 1/2 C milk & water heat to 125°
- 2 pkg yeast
- 4 tsp sugar
- 2 tsp salt
- 1/4 tsp baking soda
- 6 C flour
Heat milk & water mixture. Stir together yeast, sugar, salt, baking soda and 3 C flour. Add warm liquid to dry ingredients, stir about 2 minutes. Add 2 1/2 to 3 more C flour until thick batter. Grease 2 glass loaf pans; sprinkle with cornmeal. Place batter in prepared pans; sprinkle with additional cornmeal. To let rise, microwave uncovered on Medium (50% power) for 1 minute. Let rest (in micro) 10 minutes. Repeat microwaving and resting 1 to 2 more times until dough has doubled.
To bake: microwave on High (100% power) for 8-12 minutes or until top (and bottom) is no longer moist. Let stand 5 minutes in pan. Remove from pan and let cool on wire rack.
