
Cherry-Nut Fingers
Ingredients
- 2 1/4 C flour
- 3/4 C sugar
- 2 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp baking soda
- 3/4 C chopped maraschino cherries well-drained
- 1/2 C chopped walnuts
- 1 egg
- 1 T grated orange rind
- 1/2 C orange juice
- 1/2 C milk
- 3 % melted shortening
- 1 container whipped cream cheese 8 oz
Instructions

Sift flour, sugar, baking powder, salt, and soda into a large bowl; stir in cherries and walnuts.

Beat egg in a small bowl; stir in orange rind and juice, and milk; add all at once to flour mixture; add melted shortening. Stir just until evenly moistened. Spoon into a well-greased loaf pan, 9x5x3.

Bake in moderate oven (350°) 1 hour, or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack, 10 minutes; loosen around edges with a knife; turn out onto rack; cool completely. Wrap loaf in waxed paper, foil or transparent wrap and store overnight for easy slicing.

When ready to make sandwiches, trim a thin slice from each end of loaf and set aside for family nibbles.

Slice remaining bread 1/4 inch thick with a sharp knife. Spread half of the slices with whipped cream cheese, using 1 T for each, put together with remaining plain slices to make sandwiches. Cut each sandwich crosswise into 4 even strips. Wrap and chill until serving time.
