Bowman Cheese Omelet

Ingredients

  • 8 eggs
  • 8 T milk
  • 1/2 tsp salt
  • 1/2 tsp dry mustard
  • 1/2 C cheddar cheese shredded
  • 2 T butter

Instructions

  1. Melt butter.
  2. Beat egg yolks until thick and lemon-colored; add cream and seasonings; add cheese.
  3. Fold stiffly beaten egg whites into all very carefully.
  4. Pour into hot buttered pan and cook over low heat for 3-4 minutes, then bake in preheated oven at 350° for 15 minutes longer.
  5. Serve piping hot. 6 servings.
