
Bowman Cheese Omelet
Ingredients
- 8 eggs
- 8 T milk
- 1/2 tsp salt
- 1/2 tsp dry mustard
- 1/2 C cheddar cheese shredded
- 2 T butter
Instructions

Melt butter.

Beat egg yolks until thick and lemon-colored; add cream and seasonings; add cheese.

Fold stiffly beaten egg whites into all very carefully.

Pour into hot buttered pan and cook over low heat for 3-4 minutes, then bake in preheated oven at 350° for 15 minutes longer.

Serve piping hot. 6 servings.
