Black-Bottom Cupcakes

Ingredients

  • 1 C cream cheese
  • 1 egg
  • 1/3 C sugar
  • 6 oz pkg chocolate chips
  • 1 1/2 C flour
  • 1 C sugar
  • 1/4 C cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 C water
  • 1/3 C oil
  • 1 T vinegar
  • 1 tsp vanilla

Instructions

  1. Combine 1 C cream cheese, 1 egg, and 1/3 C sugar; beat well.
  2. Stir in 6 oz pkg chocolate chips; set aside.
  3. Sift together 1 1/2 C flour, 1 C sugar, 1/4 C cocoa, 1 tsp baking soda, 1/2 tsp salt.
  4. Add 1 C water, 1/3 C oil, 1 T vinegar, 1 tsp vanilla; beat well.
  5. Fill muffin tin 1/3 full with chocolate batter. Top each with heaping tsp of cheese mixture. Bake at 350°, 25-30 minutes. Yield: 18 cupcakes.
