Banana Cream Pie

Instructions

  1. Combine sugar, flour and salt in top of double boiler.
  2. Add milk slowly, mixing thoroughly.
  3. Cook over rapidly boiling water until well thickened, stirring constantly.
  4. Cook 10 min. longer, stirring occasionally.
  5. Stir small amount of hot mixture into egg yolks; then pour back into remaining hot mixture while beating vigorously.
  6. Cook 1 min. longer.
  7. Remove from heat and add butter and vanilla.
  8. Cool.
  9. Peel and slice bananas into pie shell and cover immediately with filling.
  10. Top with meringue or sweetened whipped cream.
