- 1/2 lb italian sausage
- 5 T butter
- 2 C chicken stock
- 1 lb ricotta/cottage cheese
- 2 T parsley chopped
- 2 T olive oil
- 1/2 C Parmesan cheese
- 1/2 C flour
- 1 C white wine
- 1 egg lightly beaten
- 1 tsp salt
- 1/2 lb Ziti
Melt 4 T butter; mix flour in, using wire whip. Cook over med. heat 2 min. Add chicken stock & white wine. Simmer 15 min.
In a medium bowl, combine cheese, egg, 1 T parsley, salt and pepper. Sauté sausage.
Preheat oven to 350° F. Cook Ziti, add 1 T butter to noodles.
Butter pan. Alternately: add 1/4 of the cooked Ziti, spoon in 1/3 sauce and 1/3 cheese. Put Ziti on top & sprinkle sausage and parsley over top.
Cover with foil. Bake at 350° F for 25 to 30 minutes. Uncover and cook an additional 10 minutes.
Pour your favorite tomato-based italian sauce over the finished product: ie. Hunts tomato sauce with added fresh garlic, onion, sweet basil, salt & pepper.
