Apple Doughnuts

Ingredients

  • 5 C flour
  • 4 tsp baking powder
  • 1 tsp soda
  • 2 tsp salt
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1/4 tsp mace
  • 1/4 C shortening
  • 1 C sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 C applesauce
  • 1/2 C buttermilk
  • Vegetable oil

Instructions

  1. Mix and sift flour, baking powder, soda, salt, nutmeg, cinnamon and mace. Cream shortening; add sugar and cream until fluffy. Add eggs and beat till smooth. Add vanilla, applesauce and buttermilk; mix well. Add flour mixture 1 C at a time; beating till smooth after each addition. Chill dough at least 2 hours. Turn out on well-floured board. Roll out dough to 1/2" using additional flour if necessary. Cut with floured 2 1/2 " doughnut cutter. Heat veg. oil (2" deep) to 375°. Gently drop doughnuts in hot fat, 3 or 4 at a time. Fry 1 minute on each side. Drain on absorbent paper. Makes about 2-2 1/2 dozen.
