Apple Cinnamon Granola

Ingredients

  • 5 C oats uncooked (1 lb)
  • 1 C shredded coconut
  • 1/2 C cashews finely chopped
  • 1/2 C wheat germ
  • 1 tsp cinnamon
  • 1/2 C honey
  • 1/3 C veg. oil
  • 1 tsp vanilla
  • 1 1/2 C chopped dried apples
  • 1 T brown sugar
  • 1 C raisins or dried fruit
  • 1 C sunflower nuts

Instructions

  1. Preheat oven to 350°. Combine oats, coconut, cashews, wheat germ and cinnamon in large bowl. Stir in honey, oil and vanilla thoroughly with large cooking spoon. Mix until dry ingredients are well-coated. Spread mixture on ungreased 9x13" pan and bake 30-35 min, stirring often to brown evenly. Cool. Toss apples and dried fruits and nuts in brown sugar. Stir into granola until crumbly. Store in tightly covered container in refrigerator.
