Angel Hair Pasta and Quick Tomato Sauce
- 2 cloves garlic finely slivered
- 2 c diced fresh plum tomatoes
- 2 c diced canned plum tomatoes
- Pinch of nutmeg
- Salt to taste
- 1/4 lb angel hair pasta
- Freshly gr black pepper to taste
- 4 T coarsely chopped parsley
- 3 c peeled sliced and slivered yellow onions
Onions (start these first)
Line a cookie sheet with aluminum foil.
Spread onions on sheet, toss with remaining 1/4 C Olive Oil. Grind black pepper to taste (I grind a LOT).
Place under broiler,3 - 4 inches from flame. Cook untilo nions are carmelized. PRO TIP: stir frequently and take time to cook to your preference. this makes or breaks the dish for me!
Over low flame, heat1/4 C Olive Oil in a saucepan. Add garlic and cook until it softens (do not brown). Add tomatoes, nutmeg, salt and pepper. Stir and cook uncovered over medium heat for 10 min. Add 2 T. parsley and turn heat to low to keep warm.
PUTTING IT TOGETHER
divide tomato sauce among 4 flat bowls.
place equal portions of pasta on each plate in the center of tomato sauce.
top with broiled onions
sprinkle with remaining parsley
